How to make Pokémon-themed Pikachu marshmallows

What You Need:

For Electric Sugar:
1/2 cup sugar
1/4 tsp water
4 drops yellow gel food coloring

For Marshmallows:
2 1/2 tablespoons gelatin
1 cup water
1 1/2 cups sugar
1/3 cups light corn syrup
1/3 cup honey
1/2 TBL vanilla extract
1/2 cup melted chocolate
No-stick spray, as needed

For Electric Sugar: Add yellow food coloring to 1/4 tsp water. Combine with sugar in a small zip top bag until the sugar is bright yellow. Set aside.

For Marshmallows: In the bowl of your stand mixer, combine your gelatin and 1/2 cup of your water. Set aside. Spray a 9 x 13 pan with no-stick spray. Line it with parchment, and spray the parchment with no-stick spray. Set aside.

In a saucepan, add remaining water, sugar, corn syrup and honey. Cook until it reads 238 degrees on a candy thermometer. Slowly pour into your stand mixer with the reserved gelatin mixture on low heat. Once it’s all in, beat on high for 12 minutes. It should be tripled in size. Add your vanilla extract.

Spray a spatula with no-stick spray and dump the marshmallow mixture to your prepared pan. Spread as evenly as possible. Allow to set for at least four hours.

Once set, spray a Pikachu cut-out with no-stick spray and punch our marshmallows. Quickly place marshmallows into your electric sugar and toss until coated. Then, dip Pikachu ears first into some melted chocolate. Allow to set on a cooling rack. Eat within a week.
